When everyone insists that you make this for every holiday, don't blame me! LOL
1 Cup Sugar
1 Stick Margarine
1 Tsp. Vanilla
2 Eggs
1/2 Cup Canned Milk
Topping:
1 Cup Chopped Pecans
1 Cup Light Brown Sugar
1/3 Cup Flour
1/3 Cup melted Butter (to make everything moist)
Mix all ingredients and place in a greased baking dish (I use one of those blue rectangular dishes). Sprinkle with topping.
Bake at 350 for 35-45 minutes
In a pinch, you can substitute the vanilla and canned milk with 1/2 cup of Very Vanilla Soy Milk. I've done that twice, and couldn't taste a difference.
I like to bake mine a little less than this. At 35 minutes, the topping becomes crunchier, like a candy topping. It's good, but I just prefer it more crumbly.
Also, I usually use 1 1/2 cups of chopped pecans, but that's just because I like pecans. You can add more butter to the topping to make it easier to spread, too.
